Ingredients
- 1 large courgette
- 1 Red chilly finely chopped
- 3 Cloves of garlic finely chopped
- 1 tsp Oregano. dried
- 1 tsp dried parsley
- 1 tsp Dried basil
- 2 tbsp red wine vinegar
- extra virgin olive oil

Slice the courgette fairly finely & put under a grill for a few minutes until it warms up (don't allow to brown). Put in a bowl with all the other ingredients and pour olive oil over to cover. Put in the fridge and allow to marinade for a few hours.

This is great served on fresh crusty bread or on warm toast.
