Ingredients
- 2 Tins Black eyed beans. Drained
- 2 Tins Cannellini Beans. Drained
- 2 Tins Kidney Beans. Drained
- 1 lb Carrots. Chopped into small bite size pieces
- 1 Green Pepper. Chopped
- 1 Yellow Pepper. Chopped
- 2 Tins Chopped Tomatoes
- 4 Tbls Tomato Puree
- 5 Tbls Ground Cumin
- 3 Tea Spoons Chilli Powder. (Add more to increase the heat)
- 1 Tbls Chopped Thyme
- 1 Tbls Chopped Oregano
- 1 Litre Vegetable Stock
- 2 Tea Spoons Caster Sugar
- 4 Cloves of garlic finely chopped

Theres probably a hundred 3 bean chili recipes out there, here's mine, i really enjoy it, I hope you do too.
Its really cheap to make too!
Method

1. To a Large Pan add the onions and fry for 5 minutes until starting to brown.
2. Add Carrots, Garlic and Peppers and fry for a further 2 minutes.
3. Add the Spices, Tomato Paste, and Sugar and Fry for a further minute stirring continuously.
4. Add the Beans, Tins of Tomatoes, Stock and the Herbs bring to the boil and simmer for 1 hour and 20 minutes stirring occasionally until the sauce is rich and thick and the flavours have combined.
5. Serve with Basmati Rice and a dollop of sour cream.
Chef's Tips
Spend some time prepping all the ingrediants in advance of cooking then the dish is really simple and quick to get going and once its simmering you can just leave it be and check on it every now and then.
The Ingrediants listed is enough to feed a small army but it freezes really well, I freeze mine in individual portions that make a great home made ready meal when the need arrises.
if you want to make a smaller portion just halve the ingrediants.
