- 400g Leeks washed and sliced
- 25g Butter
- 750ml white stock or water
- 200g Potatoes. cubed
- Bouquet Garni
- salt and pepper

Slice the Leeks
Slowly cook in the butter until soft but without colouring
add the stock, the Bouquet Garni, the potatoes and season with salt and pepper and bring to the boil.
Simmer until leeks and potatoes are soft,(15 mins).
Remove Bouquet Garni and puree, check seasoning and your done!
(add milk or cream if desired)
ENJOY!

i also added garlic to mine,gives it a nice extra taste.
