- 2 - 3 Knorr fish stock cubes
- 450g haddock
- 200g frozen prawns
- 10 frozen brocolli florets
- 150ml milk
- 200g cheddar

Description
This is one of my families favourite week day teas. Its healthy, simple and only takes 30 mins to make. This feeds the 6 of us with leftovers.

1. Heat oil in a large saucepan and add garlic puree to taste (I just chuck in a good squeeze) and chopped onion. Sautee until onion is softened.
2. Chop potatoes into approx 1.5 inch chunks and add to saucepan. Crumble 2 - 3 fish stock cubes over potatoes and stir. Cook for a few minutes then add enough hot water to cover the potatoes. Bring to the boil then simmer for 20 minutes or until potatoes are cooked.
3. Once cooked use a fork or masher and squash some of the potatoes to thicken the consistency of the soup. At this stage I taste and add seasoning or crumble in some more stock cube if needed.
4. Cut fish into largish pieces and add to pan along with frozen prawns and broccoli. Simmer for 5 minutes or until fish cooked through.
5. Taste and season if necessary. Add milk, stir and simmer for 1 minute or so. Serve into bowls. Chop cheese into small chunks and chuck a handful into each bowl of chowder just before serving.
Chef's Tips
VARIATIONS:
Use any plain or smoked white fish. Whatever is within budget.
Instead of brocolli use frozen peas or sweetcorn.
Use cream instead of milk if desired.
We use cheddar or Red Leicester cheese because its cheap but Gruyere or similar is really nice.
