- 8 Spring onions
- 4 Duck breasts
- 150ml Japanese soy sauce
- 2tbsp Sake
- 1tbsp light brown sugar

Chop the onions into chunks and the breasts into strips. Thread them onto skewers.
Mix the flour, soy sauce, sake & sugar in a pan and bring to the boil, stirring all the time. Turn down to a simmer and simmer for 10 minutes or until reduced by a third.
Baste the kebabs with the sauce and grill for 4 mins each side under a hot grill basting every now and then. Por the remainder of the sauce over the cooked kebabs and serve.
Chef's Tips
Soak the skewers beforehand if they are wooden. Stops them burning.
