Grate the courgettes and place in a bowl. Add a small amount of a very good balsamic vinegar. Leave in the fridge untill chilled. Serve a dollop on your salad. Keeps well for a few days in the frige. You can also grate raw beetroot and do the same.
That sounds lovely. I am growing loads of chillies in the greenhouse so will give this recipe a go.

Also good to grate the courgette, sprinkle with fresh chilli and mint (all of which I am growing! :)) and drizzle with olive oil.
