1. peel and chop carrots and potatoes and put into an empty pressure cooker.
2. chop garlic,onion and bacon and fry in a pan with a little oil.
3. when lightly browned put onion, garlic and bacon into the pressure cooker with the carrots and potatoes
4. add in the tins of tomatoes
5. pour in the scrumpy cider (so that it covers all the ingrediants in the pressure cooker)
6. crumble in the stock cube
7. bring to the boil on the hob
8. put the lid on and let it simmer until potatoes and carrots are soft
Chef's Tips
This recipe can be addapted to your own choice of meats, as i first tried it with chicken not bacon and this tastes great too!
Would it be safe to say that the alcohol will be burnt off and one would only have the taste of the cider?
