- 1 lb young carrots. finely chopped
- 1 tablsp soft brown sugar
- Butter mixed with oil to saute
- 4 fl oz Cider (Dry preferably)
- 4 tablsp Veg Stock
- 1 tablsp french mustard
- Handful chopped parsley

Description
This is a great way to liven up carrots, which can be a bit boring, and using up any cider that's going flat.

Put the butter/oil in a frying pan and add the carrots. Saute for 5 mins - keep turning. Add the sugar and cook for a further minute or until the sugar has dissolved.
Add the cider and stock and bring to the boil.Stir in the mustard. Simmer briskly for another 10 mins or until the carrots are tender.
Remove the carrots from the liquid with a slotted spoon into a hot serving dish and keep warm. Boil the liquid furiously until reduced to a thick sauce - keep stirring.
Pour over carrots and sprinkle with chopped parsley.
