- 3 eggs
- spinach, boiled and chopped
- 50g cheese
- 4-5 Slices of chorizo
- 2 spring onions
- 5 cherry tomatoes
- 6 tbsp milk
- 8 sliced black olives
- salt and pepper

A delicious and healthy recipe, great for breakfast or why not even for a snack during the day. You can substitute the vegetables according to preference or season

Cut the onions, boil drain and chop the spinach and grate the cheese. Slice the tomatoes, cut the chorizo in small cubes and fry it in a bit of oil for 2-3 minutes on a low heat.
Beat the eggs with a pinch of salt and pepper then add the milk, vegetables and cheese with the fried chorizo ​,​,and sliced ​,​,olives then mix well.
Heat up a bit of oil in a pan that you can use under a grill or in the oven, I used a Yorkshire pudding tray and made 4 mini frittata's, Pour the eggs in the pan and let it set.
Place the pan under the grill or put it in the oven on a low heat until the eggs are done and you have a golden and crispy top.
When done place them on a paper towel to remove the extra oil and serve with your favourite salad or a slice of toast.
