Description

You can't beat a good crumble and I think the 'love it or hate it' gooseberry is one of the few fruits which lend themselves perfectly to make a mouth-watering crumble.

Method

    1. Pre-heat oven to 190oC.
    2. Cook gooseberries with the caster sugar and a couple of tablespoons of water, covered, in a saucepan for about 5-6 mins.
    3. Meanwhile rub together the flour and cut up butter or margarine until you have a fine mixture resembling breadcrumbs. Stir in the porridge oats and the sugar.
    4. Tip the gooseberries into an oven proof dish and smooth out into an even layer.
    5. Tip the topping over the fruit and gently level off.
    6. Place in the oven and cook for about 25 mins or until golden brown.
    7. Serve with custard or cream or icecream or all three!

Chef's Tips

You may need to vary the amount of sugar in the fruit according to how sweet you prefer the crumble to be.
