4 individual sachets of instant miso soup mix
3 tbsp light soy sauce
3 dried egg noodle nests
200g tenderstem broccoli, roughly chopped
4 small salmon or trout fillets, boneless and skinned

1. Empty the miso soup mix into a large saucepan, pour in 1 litre of boiling water, add the soy sauce, stir and bring back to the boil.
2. Submerge the noodles and broccoli in the mix then sit th efish fillets on top. Cover and simmer for 4 to 5 minutes until the noodles are cooked and the fish is flaking.
3. Stir in the baby spinach then serve in big bowls with chopsticks and spoons.
