- 1 onion, finely diced
- pinch of dried chilli flakes
- 3 cloves garlic, crushed
- 1 jar passata
- 100 ml double cream
- 1 big slug vodka
- 1 bunch basil, chopped

1. Fill a large saucepan with water and bring to the boil, then add a pinch of salt.
2. Heat a deep frying pan with a tbsp of oil, add the pancetta and cool for a couple of mins untul it starts to go brown. Then add the onion, chilli and garlic. Continue frying until the onions are translucent.
3. Pour in the passata and cook for 20 minutes, or until the flavours have mellowed. Add the cream and vodka and cook for another five minutes.
4. Add the basil to the pot. Check the seasoning. This sauce can be made in advance and kept covered in the fridge, if necessary.
5. When the pasta is ocoked, drain off and add to the hot sauce. Cook for another 2 minutes, mixing the sauce and pasta together. I sometimes add another glug of oil at this stage. Check the seasoning and serve.
