- 4tbs Honey

Nice easy recipe here that always impresses!
First pre-heat the oven to around 200C (change this to suit your type of over - i have a fan oven)
Whilst the oven is preheating, create a pocket in each of the chicken breasts.
Into this pocket, stuff about 75g of the stilton cheese (or any other strong blue)
Next, tightly wrap each stuffed breast in 2 slices of the parama ham to hold it all together.
Lastly, glaze the top of each one with some of the honey + pop into the over.
Next, have a glass of wine + chill out for about 15 minutes.
Just before removing the chicken from the oven, put the kettle on to boil & put a collinder/sieve over the sink.
Put the spinach into the sieve and once the kettle has boiled, pour it over the top to blanche cook it.
Quickly put the cooked chicken (should be piping hot and golden) onto plates + quickly add spinach.
Serve with a warm ciabatta or other crusty roll
