- Asparagus spears
- 1-2 courgettes
- two dollops pesto
- handful cheese. grated
- Boursin cheese chunks
- olive oil
- three rashers Bacon chopped

Description
This was something I discovered as a quick but yummy way to get a good injection of veg. More vegetables can be added if you like and the tart goes nicely hot with peas.

Preheat the oven to 190 degrees. Cut out as much pastry as you need and bunch up the crusts. Lay it on a baking tray - I use baking paper just to make clearing up easier.
Mix the courgettes, pesto and a glug of oil in a bowl and then spread evenly on the pastry. Add asparagus on top. Lightly fry the bacon and sprinkle on top.
Put in the oven for about fifteen mins or until almost cooked.
Add the cheeses and cook for five mins until melted.
Take out and serve with peas in winter or salad in summer.
