Ingredients
- 2 servings Egg noodles
- 150g button mushrooms
- 1 ยฝ Vegetable Stock Cube
- 150g Pak Choi
- soy sauce
- 1 slice ginger
- 2 small Shallots
- 1 clove garlic
- 800ml hot water

1. chop shallots, garlic and ginger in to small slices
2. start to fry them in a small amount of water
3. make up the stock with the 800ml of water and pour in to the pan when the garlic etc looks softend
bring to the boil and then leave on a lower heat to simmer
4. cut the mushrooms in half and roughly chop the pak choi
5. add vegetables to water and add a little soy sauce
6. add the egg noodles and leave to simmer with a lid for about 5 - 10 mins
7. when the noodles are nice and soft its ready to eat!
Its a brriliant dish for vegies specially in cold weather
