I use the pampered chef mini muffin tin and tart shaper to make these as they are so easy for lunch boxes or treats for the family. I roll the pastry into a ball and then put in 1 of the muffin holes. I press down the tart shaper and it makes it into a small pastry case. It makes 24 cases. I then fill with various jams such as strawberry, raspberry, and apricot. Cook for 15-20 minutes on 200 degrees until pasrty is cooked.
You can either make pastry or buy it already prepared.

To make short crust pastry:
Sift 100 g of plain flour in to a bowl, high up to get lots of air in. Add 2 ozs of butter and rub between fingers until it forms bread crumbs. Add 1 tblsp of water at a time and mix with a knife until it form a dough. Let it rest for a bit before using.
