Ingredients
- 1 Eating Apple
- 1 Small Cooking Apple
- 1 Medium Carrot
- 2 Medium Free-Range Eggs
- 250g Wholemeal self-raising flour (white also works well)
- 100g Soft Light Brown Sugar
- 125ml Vegetable Oil ( I used Canola oil)
- 1 tsp Baking powder
- 3 tsp Ground Cinnamon
- 3 tbsp Golden Syrup or Honey
- 2 tbsp Greek or Natural Yoghurt
- juice ΒΌ an orange (optional)
- orange zest (optional)
- 2 tbsp Soft Light Brown Sugar
- 2 tsp Ground Cinnamon
- Handful Your choice of chopped nuts or seeds

Method

For the mixture:
1. Preheat oven to Gas Mark 6 , 200deg.C (180deg.C fan-oven)
2. After washing , peeling and coring apples , coarsely grated them both and set to one side.
3. In another bowl coarsely grate the carrot and set to one side along with the grated apples.
4. In a larger mixing bowl combine the flour , baking powder and cinnamon.
5. In a smaller bowl whisk together the two eggs , sugar , vegetable oil , syrup and yoghurt. Stir in the grated apples and carrot.
6. Using a large metal spoon , fold the wet ingredients into the flour mixture. Continue folding in the wet ingredients till well combined. Be sure not to over mix the ingredients.
7. Spoon the mix into the muffin cases and set aside.
For the topping:
1. In a clean bowl combine the sugar , cinnamon and your choice of nut or seeds ( I used pumpkins seeds however other nuts such a chopped almonds would work well).
2. Once combine sprinkle and small amount onto each of the muffins.
3. Place the muffins into the oven , on the middle shelf and bake for around 20 minutes.
4. Remove muffins from the oven a test with a cake tester or blunt knife to ensure they are cooked through.
5. Leave to cool and enjoy warm with a nice cuppa!
