Method

    Preheat the oven to 180 degrees C.
    Put the oats, wheatgerm (if using) coconut, nuts (roughly chopped if needed - pecans can be snipped in half or into quarters with scissors), flaked almonds and sugar in a bowl, drizzle over the oil and the honey, mix well together and tip onto a baking tray. Bake for 15 minutes, stirring half way through, until it is starting to turn golden. Snip the apricots into 3 or 4 pieces, and mix with the raisins, cranberries and pineapple, and add to the baking tray after the initial 15 minutes. Bake for another 15 minutes, again stirring half way through.
    Leave to cool, stirring after about 5 minutes to break it up a bit.

    When completely cool, transfer to a large jar / tin / plastic box and it will keep for at least a week.

Chef's Tips

Great to nibble on as a snack too!
If you like chocolate in your granola, add a couple of handfuls of chocolate chips or chopped chocolate once cool.
If you like the combination of 'sweet and salty', add 1/2 tsp salt or fleur de del when you add the sugar.
