- Grated rind and juice of 1 orange

- 3/4 to 1 Ib icing sugar
- White of 1 egg
- Orange juice

I got this old holiday recipe from an out-of-print recipe book called Bestway Cookery Gift Book.

Beat the sugar and fat to a cream. Add each egg separately. Stir the first egg in quickly and beat the mixture well before adding the next egg. When both are well beaten in, add the grated orange rind and stir in the flour, sifted with the baking powder, adding the orange juice and then some milk, if required. Mix all together lightly, then turn the mixture into two buttered sandwich tins and bake it till spongy. Cool the two sponges on a sieve and, when cold, sandwich them together with apricot jam. Pour the icing over the cake and, when nearly set, sprinkle it with desiccated coconut and stick a sprig of holly to the centre.
To make the icing: Sift the icing sugar and mix it to a thick coating consistency with the lightly beaten egg white and some strained orange juice as required.
