Description

A classic French vegetable casserole.

Method

    1. Heat 2 tbs olive oil in a large saucepan over a very low heat. Add garlic and onions and cook without colouring until just tender. Remove from pan onto a large plate and keep warm.

    2. Add the red and green pepper to the oil and again cook until just tender. Remove from pan, add to the onions and keep warm.

    3. Add the aubergine to pan, adding more oil if necessary, cook until just tender. Remove from pan and keep warm.

    4. Add courgette to pan and follow the above procedure.

    5. Return all vegetables and juices to the pan, now add the tomatoes, fresh thyme sprigs and parsley, mix thoroughly together, bring to the boil, reduce heat and simmer for 20 minutes.

    6. Check seasoning and serve.
