- 6 Potatoes. cubed
- 2 garlic cloves. crushed
- 2 tbsp Creme Fraiche
- salt and pepper
- 1 litre vegetable stock
- 150g butter or margarine

Description
This soup is really simple and so easy to make, yet it tastes super yummy. It's great if you don't want to stand over a cooker for hours and is really filling.

Boil potatoes until soft.
Melt the butter in a frying pan and gentley cook the leeks.
Pour the vegetable stock into a large cooking pot with the garlic.
Add the potatoes and leek.
Add the creme fraiche and mix well.
Bit by bit, put the soup in a blender until smooth.
Add salt and pepper to taste.
Serve.
