- 1 white onion, diced
- 4 garlic cloves, crushed
- 2 green chilli, seeded
- Handful fresh coriander
- 2 tsp cumin seeds
- 2 tsp garam masala
- 2 tsp tomato paste
- 1 tsp sugar
- 3 tbsp olive oil
- 2 tbsp olive oil
- 800g diced chicken
- 2 tins coconut cream
- 500ml chicken stock
- 1 red pepper, diced
- 200g new potatoes, diced
- 400g baby spinach
- Salt and pepper to taste
- Coriander for garnish

1. In a food processor, blend together all the curry paste ingredients until it forms a paste. Heat some olive oil in a large saucepan, and add the curry paste, frying for a couple of minutes. Add the chicken, and cook for a further 5 minutes.
2. Add all the other ingredients (except the spinach), and cook for a further 20 minutes on a high heat, stirring often. Add the spinach and cook for a further 5 minutes. Season to taste and serve with some extra fresh coriander.
