- 4 red onions. peeled and sliced
- 1 red chilli. finely chopped
- 4 garlic cloves. sliced
- 400-450g Good quality herby sausages. grilled and then thickley sliced
- 350g penne pasta. cooked
- 300g ricotta cheese
- 4 ripe tomatoes. finely chopped
- 150g parmesan shavings
- 2tbsp chopped parsley to serve

Preheat oven to gas mark 4

Heat oil in a frying pan over a medium heat. Add the onions, chili and garlic. Fry until softened.

Add the cooked, sliced sausages, cooked pasta, ricotta and chopped tomatoes. Stir to combine.

Transfer to oven proof dish. Sprinkle over Parmesan shavings and bake in oven for 10-12 minutes and cheese is golden brown.

Serve with chopped parsley sprinkled over the topic. Is lovely with garlic bread.
