Description
A chocolate cake recipe that uses milk chocolate as its main ingredient. It turned out really well, but beware it's loaded with calories! I used French chocolate but any will do.

1. Butter a 20cm round cake tin (7.5cm deep) and line the base. Preheat the oven to fan 140C/conventional 160C/ gas 3.
2. Break the chocolate in pieces into a bowl. add the butter and muscovado suger, then mix the instant coffee granules into 125ml cold water and pour into the bowl. Warm the mixture in the microwave on Medium for about 4 minutes, stirring half way through till everything is melted.
3. Mix the self-raising flour with the bicarbonate of soda, and cocoa powder in a large bowl.
4. Beat 3 medium eggs in a bowl and stir in 75ml milk.
5. Now pour the melted chocolate mixture and the egg mixture into the flour mixture, stirring until everything is well blended and you have a smooth, runny mixture. Pour this into the tin and bake for 1 - 1ΒΌ hours. Test with a skewer to check that it is done. Leave to cool in the tin, then turn out onto a wire rack to cool completely.
