- 225g butter. softened
- 300g soft brown sugar
- 1 lge egg
- 1 stp Vanilla essence
- 260g pumpkin. pureed
- 75g Rolled Oats
- 1tsp baking powder
- 1tsp ground cinnamon
- pinch salt
- 150g plump raisins
- 300g plain flour

Haloween!! Kids will love making these cookies with the scooped out inisdes of the pumpkin.

1. Preheat oven to 180oC/160oC fan/gas 4. Mix together butter and sugar until light and creamy. Beat in the egg.
2. In a separate bowl, mix together the oats, baking powder, cinnamon, salt, raisins and flour. Stir this into the pumpkin mixture.
3. Place spoonfuls of the cookie dough onto a greased non-stick baking tray (or one lined with baking parchment) and flatten with the back of a spoon. Place in the oven for 12-15 minutes until slightly golden. Remove and cool on a wire rack.
Chef's Tips
You will need to cook these in a few batches. Store in an airtight tin to keep fresh. I don't think they will last long though!
