Ingredients
- 125 gm butter
- 250 gm caster sugar
- 3 med eggs. beaten
- 200 ml milk
- 1 tablespoon lemon juice
- 50 gm cocoa powder
- 225 gm self raising
- grated chocolate to decorate
- 2 tablespoons milk
- 1 teaspoon Vanilla essence
- 5 teaspoons cocoa powder
- 250 gm icing sugar
- 125 gm Butter

I was given this recipe by a friend at work many years ago, and have passed it on to lots of people over the years

Preheat oven to 180 centigrade, 350F,gas mark 4
Line the bases of two 20cm sandwich tins with greaseproof paper.
Pour the milk into a jug with the lemon juice, and set aside.
In a food processor cream the butter and sugar
Add the eggs ,and then the milk and lemon juice.
When blended ,add the cocoa powder and flour
Continue to mix until smooth and lump free.
Divide between the two sandwich tins, and bake in the centre of the oven for thirty minutes
Cool on a wire rack, and then make the icing, as follows.
Place all of the icing ingredients into a food processor and mix until creamy and soft
Use half the icing to sandwich the two cakes together, and the other half to spread on top.
Sprinkle with the grated chocolate.
Store in a cake tin , or plastic container.
Chef's Tips
You dont have to sieve the flour, or fold it in gradually, as it always seems to rise.
If you like you can add the grated zest of an orange to the sponge mix, and 1 teaspoon of orange essence to the icing instead of vanilla.For a firmer icing only use 1 tablespoon of milk.

well I don't know what I did wrong...I followed the recipe to the letter and it has come out as flat as it went in :o(
I have been trying to find a good sponge recipe for ages and this is the best so far. Easy to make and tastes good. Only problem was that it did not rise very well...

I used your recipe It's great. Though I used self raising flour. after realising I had no plain flour. didn't use all the choc filling. Had the grandkids begging for more. (greedy toads)
