Rich Chocolate Biscuits
Ingredients
- 100 g Dark Chocolate (70%)
- 115 g Unsalted butter, softened
- 115 g Caster sugar (normal or golden)
- 1 (large) Egg yolk
- Β½ - 1 tsp Vanilla extract
- 125 g Plain flour
- 30 g Cocoa powder* (not drinking chocolate)
- ΒΌ tsp Bicarbonate of soda
- Approx. 3 tbsp Demerera sugar (optional but recommended)
- A little extra for dusting Plain flour and cocoa powder

Description
With both cocoa and chopped up chocolate, these are really chocolatey. Crisp outside, softer in the middle. Perfect with a cup of tea, coffee or a glass of milk.

Blitz the chocolate in a food processor or mini chopper until quite fine (but not to a paste). Alternatively, you can grate it by hand.
Cream together the butter and sugar for at least two minutes, then beat in the egg and the vanilla extract.
Sift in the flour, cocoa powder and bicarbonate of soda, then add the finely chopped chocolate, and mix in well until it comes together into a dough. It may seem dry and crumbly at first as if it needs liquid adding, but keep going and it will come together. Bring together into a ball, wrap in cling film, flatten and chill in the fridge for 30 minutes to an hour.
Sift a little plain flour and cocoa powder on the work top, divide the dough in two (I just find it easier to roll a smaller amount) and roll out to about 5mm thickness.
Cut out biscuits using your choice of cutter (I got 30 biscuits using 6 cm square / round fluted cutters) and place them on a lined baking sheet(s), a couple of cm apart.
Sprinkle generously with demerera sugar.
Return to the fridge for 10 minutes while you preheat the oven to 180 degrees C.
Bake for 10 minutes (smaller / thinner ones may only take 8 minutes, larger ones may need 12 minutes).
Leave on the baking sheet(s) for at least 5 minutes, then move to a wire rack to cool completely. Or eat (at least one!) while still warm. They are delicate, so be careful when moving them.
Chef's Tips
These can be made by hand or with machine but are easiest with a stand mixer with a paddle attachment, or electric hand whisk with beaters.
The demerara sugar on top is optional but I feel makes them extra special. You could try caster / granulated / brown sugar if you don't have demerara, although the effect will be slightly different.
These make great sandwich biscuits - use the chocolate filling from my 'macarons' recipe or the vanilla buttercream from my 'jammy dodger' recipe. Great filled with Nutella too!
These biscuits keep really well in a tin - apparently for up to 2 weeks, but I can't confirm this as we ate them much sooner!
*The original recipe specifies 'Dutch process' cocoa powder. After a bit of research my understanding is that most cocoa powder, unless it is labeled 'raw ' or 'natural' falls into this category in the UK (and Australia, I believe) although it tends not to be labeled as such. It certainly apples to Green & Blacks and Bournville, both of which I have used successfully in this recipe and others specifying ' Dutch process'.
Followed your recipe. No matter, they kept their shape. Making some more 'cos the Vultures descended W/end. Wife suggested to put melted white choc between. Who am I to argue? and yep, love After Eights

Glad they worked out for you. You'll have to try some other biscuits now you've made your first batch. Re: spreading - did you chill before baking? Could also just be the different ingredients / oven. Love the filling idea - you seem to like After Eights!
Just made amazed how well they turned out.They spread a bit wider then yours seem to be I put an After Eight between them as a sandwich while they were cooling. Wife tried a single one and said they nice.
I like the look of these L.B. Can't remember ever making any bisuits before. got all the ingredients so I'll give them a whirl W/End.
