Sweet Potato Mash with Spring Onions and Fresh Basil Served with Wild Mushrooms and Beef Steak

- 300g sweet potatoes
- 100g spring onions
- fresh basil chopped
- fresh black pepper
- 300g Wild Mushrooms. wiped & sliced if large
- 300g Beef stake
- 50-100ml Sour Cream

- Bring a large pot of salted water to a boil over medium heat.
- Peel the sweet potatoes, and cut them in smaller pieces
- When the water boils, add the cut sweet potatoes to the water and lower heat (simmer).
- Simmer for 15 minutes or until the sweet potatoes can easily be pierced with a knife.
- Drain the sweet potatoes and return to the pot.
- Mash the sweet potatoes with a potato masher
- Add sour cream (or low fat cream), fresh chopped basil, chopped spring onions and fresh black pepper
- Grill the beef steak
- Put the beef steak on a plate and let it βrestβ for 5 minutes
- Put the wild mushrooms in the heated pan, add fresh black pepper and βfryβ for 5 minutes
