- 8 cups baby spinach. cleaned and stemmed
- 1 avocado. thinly sliced
- Β½ red onion. thinly sliced
- 1 cup pomegranate seeds or Β½ cup dried cranberries
- 4 tablespoons Ribena concentrate
- 4 tablespoons rice wine vinegar
- 1 Β½ teaspoons Dijon mustard
- ΒΌ teaspoon freshly ground pepper
- Β½ cup olive oil

Description
This a lovely vegetarian salad we always serve as an accompaniment to a heavy Christmas meal.

Tear spinach into bite-sized pieces and place in a large salad bowl. Place avocado and onion over spinach.
For dressing: combine ribena, vinegar, mustard, pepper and oil in a jar with a tight fitting lid. Shake until well blended. Drizzle over salad.
Sprinkle pomegranate seeds or dried cranberries over salad, toss gently and serve.
