Put a sauce pan on a medium heat and pour in the milk and add the onion and keep a eye on it, making sure it does not boil over, when it starts to boil turn down very low. Put the sweet corn into a food processor and roughly chop, then put the water and sweet corn into a sauce pan on a medium to high heat and bring to a boil when just boiling turn down and simmer for 10mins, then remove from the heat and put to one side, at this time the milk will be ready to be removed from the heat, remove the onion and any skin from the milk and put to one side. Take the sweet corn and the water it was cooked in and pour into a liquidiser and make smooth. Now take a sauce pan on a medium heat and add the butter when the butter has just melted add the flour stirring all the time and cook for 3mins moving the roux around the sauce pan, now slowly add the milk stirring all the time while adding, then slowly add the sweet corn, now bring to a boil when just boiling turn down low and simmer for 20mins stirring from time to time. After 20mins remove from the heat, stir well and serve.
