Ingredients
- 240g/7 7/8 oz finely grated parmesan
- cracked black pepper
- 8 x 100g / 3 ยฝ oz thin beef minute steaks
- vegetable oil for frying
- 45g / 1 2/3 oz butter
- 6 cloves garlic peeled and sliced
- 1 tbsp finely grated lemon rind
- 200g/7oz baby spinach leaves
- sea salt and cracked black pepper
- extras thick cut chips

1. Combine the parmesan and pepper and place in a flat shallow dish.
2. Press both sides of the steaks firmly into the parmesan mixture.
3. Heat a splash of vegetable oil for frying in a large nonstick frying pan over high heat and cook the steaks, in batches, for 30 seconds each side or until browned.
4. Divide among warmed plates.
5. Wipe out the pan with absorbent paper and add the butter, garli and lemon ridn and cook until the garlic is golden. Add the spinach, salt and pepper and toss until wilted. Serve the steaks with the garlic spinach and thick cut chips, if desired.
