Description
This was one of the prison favourites and is also a regular favourite at home. I would like to dedicate this recipe to Andy. It brings back fond memories.
Method
-
1
Mix the spices, colouring, lemon juice, ginger and garlic into a paste with a little water and stir in well with the yoghurt to make a tandoori marinade.
-
2
Marinate the chicken in the marinade for 2-60 hours.
-
3
Preheat the oven to its highest heat for at least 20 minutes.
-
4
Shake off excess marinade and place chicken pieces on skewers on a wire rack in the oven.
-
5
If preferred, do not use skewers.
-
6
Cook for 15-20 minutes and check the chicken is cooked by piercing the thickest piece with a skewer.
-
7
If the juices run clear it is cooked.
-
8
Serve with a lemon wedge.
Chef's Tips
This is also the basis for the great Chicken Tikka Masala. I will share that one with you next! Serve the Tikka with rice, salad, naan, mint yoghurt and lemon or lime wedges. Care with the quantity of chilli you use. Yummy!!!
