- 1 avocado halved, peeled and roughly diced
- 1 pomegranate, halved
- 1 sprinkle Omega 3 Seed Mix
- Large helping baby spinach leaves
- 2 tomatoes chopped
- Handful Fresh Coriander
- ΒΌ cucumber. diced
- Β½ Little gem lettuce
- 1 mug Quinoa
- 2 handfuls Raw Cashews, toasted
- 1 sprinkle Dried cranberries (no added sugar)

Do you SUPERBOWL? THIS is the secret to a quick, easy and uber-nutritious lunch which will sustain you through the afternoon and boost your health.

Cook the quinoa. I use the same method as for cooking rice - rinse the quinoa thoroughly, then place in a pan with twice the quantity of cold water, bring to the boil, then turn down to a simmer and cook until the water has evaporated (about 15 minutes, usually).
While the quinoa is cooking, dry fry the cashew nuts in a non-stick pan until lightly browned on both sides and set aside so they go crunchy (they're a bit squidgy in texture 'til they cool).
Chop all your salad, and arrange in a bowl - spinach and lettuce in first, then tomatoes and cucumber.
To serve two, take two fist-sized portions of quinoa, and mix with the chopped coriander, and a squeeze of lime then divide between the two bowls.
Add a fist-sized portion of the limed herby quinoa on top, then sprinkle your omega seed mix and dried cranberries over it.
Halve the pomegranate and set aside half for another day. With the half you're using today, squeeze the seeds out on top of the salad bowl, and make sure you evenly share out the juice over the top of both bowls - this is your sweet and tangy salad dressing!

Chef's Tips
Vary your ingredients to keep this fresh - change spinach for lettuce. Add broccoli. Swap the cashew nuts for other nuts, or feta / goats cheese. Go for bacon and avocado. Dress it with a squeeze of tangerine. Switch coriander for basil. Add steamed or smoked salmon on top.
