Apple and bran muffins (dairy and refined sugar free)

Healthy, quick and easy breakfast muffins

Method

Preheat the oven to 180C.

Mix together the maple syrup and coconut oil in a freestanding mixer or by hand. Beat in the eggs one at a time. Add the bran and sieve in the cinnamon, baking powder and flour. Mix together until combined then slowly add the milk until you have a runny, smooth mixture.

Fold in the grated apple then divide between 12 muffin cases (fill each case to about ¾ full). Sprinkle a little extra bran over each muffin then bake for around 25min. The muffin should spring back when pressed lightly and a skewer should come out clean when inserted for a few seconds.

Leave on a wire rack to cool before enjoying with a nice cuppa!

Oat Bran 50g + extra to sprinkle
Self Raising Flour 200g
Eggs 2
Maple Syrup 100ml
Coconut Oil 100ml
Apple (cored And Grated) 200g
Baking Powder 1 tsp
Cinnamon 1 tsp
Rice Or Almond Milk 200ml
