Take off outer layer of onion and slice into 3 equal slices (round). Lay in roasting tin.
Peel and chop carrots and parsnip into quarters (4 inch long) lay in roastign tin.
Smash each whole garlic clove with a knife (flat blade) - no need to peel. Place each clove on one of the onion slices.
Chop celery into 4 inch long lengths and lay in roasting tin.
Place the joint of meat of your choice in the tin so it is supported by the onions and garlic - the other veg can sit anywhere.
Roast the meat as usual to your liking and remove to rest when done.
Place the roasting tin with vegetables on a trivet and mash with a potato masher. Place on the hob and heat over a low heat.
Add flour and cook out for 2 mins.
Add the mustard, stock and pepper. S
tirring all the time cook for 1 mins then add the hot water and put on high heat for 2-4 mins stirring all the time.
Add more water for your preferred consitency.
Pass through a fine sieve with a metal spoon to squeeze all the juice though into a saucepan.
Simmer for 5 mins in the pan and serve. Enjoy!
Chef's Tips
This can only be made with the roast!! Using the natural meat juices for flavour - the stock can be left out for real purity!
