Magenta Sunset Cocktail
Ingredients
- 7.5 ml Bacardi
- 30 ml Parfait D'Amour
- Dash Campari
- 30 ml American Cream Soda
- 4 cubes Ice

This tastes as good as it looks and the zig-zag of bitter and sweet on the palate is definitely what makes it work.
Method

Put the 4 ice cubes in a Martini glass whilst you mix the other ingredients in a cocktail shaker.
After the ice has had about 4 minutes to chill the glass, put the ice into the shaker and shake for about 10 seconds.
Pour everything into the chilled glass and enjoy.
Chef's Tips
The inclusion of the ice cubes in the final cocktail is OK because the drink has already been diluted by the cream soda. If you find your drink is already chilled enough, simply strain them as you pour.
Absolutely....I considered making it in a highball glass as a tall-drink, with more ice, but on the day I made it, my "mini" ice cube tray was depleted - hence what you see here, but I am going to try a variation of this concoction, swapping the Barardi for Absinthe, and see what happens!! Not sure why the measurement units for this recipe keep reverting to capitals (Ml instead of ml...) but I'm most people will have worked it out !
