Feta and spinach quinoa burgers
Ingredients
- 100 g Quinoa (dry weight)
- To taste Sea salt
- To taste Ground black pepper
- 1/2 Red chilli (optional)
- Handful Fresh soft herbs*
- 50 g Fresh spinach
- 100 g Feta cheese
- 2 Eggs
- 50 g Oats* (rolled / porridge)
- A little for frying Olive oil

Description
These are great with a big bowl of salad and mini new potatoes or in a burger bun. Serves 4.
Method

Rinse the quinoa in a sieve then put it in a saucepan with 350 ml water.

Bring to a boil, lower the heat, then simmer for 20 minutes until cooked.

Tip into a sieve and cool with running water.

Drain really well. You want it to be as dry as possible, or it will be difficult to form the burgers.

Rinse the spinach, pat really well with kitchen paper, then chop.

Cut or crumble the feta into small cubes.

Finely chop the chilli if using.

Crack the eggs into a cup and lightly beat with a fork.

Put the quinoa, oats, eggs, feta, chopped spinach and herbs in a mixing bowl.

Add the chopped chilli, if using.

Mix well together and season, to taste, with black pepper.

Add a little salt if you think it needs it.

Cover, then chill in the fridge for at least 30 minutes.

Take out the mixture and form 8 medium patties with your hands (or 4 large ones if serving in large burger baps).

If it is not coming together, add another tablespoon of oats and mix together.

Heat the oil in a frying pan on medium heat.

Add the burgers and fry for 3 minutes on each side, until lightly golden and crispy on the outside.

You can keep the uncooked mixture in the fridge for a couple of days, or freeze the formed burgers, before cooking.
Chef's Tips
* Ensure they are certified gluten free if following a strict gluten free diet.
**e.g. dill / basil / mint / coriander or a combination.
These go very well with slices of avocado or a dollop of guacamole.
