Peanut Butter and raspberry muffins

a delicious concoction from food we were about to chuck away! The banas in this recipe replace the egg so they're completely vegan and minimise the amount of extra sugar needed.


  1. 1. mash the bananas until they're like a puree
  2. 2. mix in all of the ingredients except the raspberriesuntil you get a smooth batter. Gently fold in the raspberries
  3. 3. heat the oven to 200c (180c fan)
  4. 4. using muffin cases, fill your muffins until 3/4 full
  5. 5. bake your muffins for 20-30 mins
  6. 6. allow to cool completely


3 really ripe bananas
200g fresh respberries
50g buckwheat flour
30g peanut flour
200ml milk
1 tsp gluten free baking powder
