Description

These soft and fluffy rolls are infused with aromatic rooibos tea and a hint of spice from chakalaka, bringing a uniquely comforting flavor to your meal. Perfect as a side dish for stews or flavorful enough to enjoy on their own, these rolls are sure to impress family and friends alike.

Method

    Preheat your oven to 200ยฐC (392ยฐF).

    In a small pot, brew 250 ml of rooibos tea and let it cool slightly; reserve 50 ml for brushing.

    In a large bowl, combine 500 g of all-purpose flour, 1 tsp of instant yeast, 1 tsp of salt, and 2 tbsp of sugar. Stir well.

    Add the slightly cooled rooibos tea (200 ml) and 2 tbsp of an excellent quality olive oil. Mix until the dough starts to form, then knead on a floured surface for about 5-7 minutes until smooth and elastic.

    Place the kneaded dough into a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.

    After rising, punch down the dough and knead in 100 g of chakalaka, combining thoroughly.

    Divide the dough into 12 equal portions and shape them into rolls. Place them on a baking sheet lined with parchment paper, spaced slightly apart.

    Brush them with reserved rooibos tea for glaze, then cover lightly with a clean towel and allow them to rise for another 30 minutes.

    Once risen, bake the rolls in the oven for 20-24 minutes until golden and puffed-up.
