The smell of cinnamon wafting through the house will make you feel all warm and Christmassy!!

    Lightly beat the egg whites and salt. Add the sugar and mix well. Add cinnamon, kirsch (or lemon juice) and almonds to form a dough.

    Roll out the dough between two sheets of a cut open freezer bag approximately 7mm thick. Then use a star shaped cutter to cut out the biscuits, and place carefully on a baking tray lined with baking paper. (To make sure the cutter releases the biscuits easily, keep on dipping the cutter in sugar and wash occasionally.) If the dough is too sticky, add some more ground almonds.

    Let the biscuits dry at room temperature for 5-6 hours or overnight.

    Before baking roll out the white icing approximately 2mm thick (or use ready rolled icing), and use the same star cutter to cut one icing star for each biscuit.

    Preheat the oven to 250ยฐC (standard oven), and bake biscuits for 3-5 minutes.

    Whilst the biscuits are still hot, carefully place the icing stars onto the biscuits and lightly push down. Let the biscuits cool down on a wire rack.
