- 20 mushrooms. sliced
- 100 gm Pasta ( any type )
- 2 tbsp olive oil
- salt and pepper
- 1 handful Herbs of choice (basil . marjoram)
- Lemon Juice (fresh)
- 1 tbsp Butter
- parmesan cheese. grated
- 3 garlic cloves. finely chopped

The lightest and most refreshing pasta. Quite unusual.

Boil pasta as per instruction. Put salt in the water while cooking and a tsp of olive oil. DO noy drain pasta.
In the meantime, heat the olive oil in a pan. When it is really really hot, add the mushrooms. Add salt and pepper, the mushrooms get the taste right from this stage.
Add garlic in the pan and toss.
Switch off gas. Add chopped butter. Top with fresh herbs and a squeeze of lemon . It gives it a sheen.
Toss it around. Add some grated Parmesan. ( while still off the gas)
Add pasta to the mushrooms. Add a few ladlefuls of the cooking water for the sauce. Toss and serve with some chopped herbs on top.
