Ingredients
- 2 large cooking apples. peeled. cored and sliced
- 3 tbsp. fresh ginger finely chopped
- 1 onion. chopped
- 4 Potatoes. cubed
- 2 litres Water
- salt and pepper to taste
- 2 tbsp. olive oil
- 1 lemon. juice only
- 1 tbsp. sugar
- 1 tbsp Calvados or similar (optional)

Heat the oil in a heavy pan and add the apples, ginger, onion, and diced potatoes.
Mix slowly until the mixture is soft but not brown.
Season and add the hot water. Bring to the boil and simmer for 15 -20 minutes. Cool slightly before putting the mixture through a liquidiser.
Add the lemon juice and sugar to taste and the Calvados if wanted.
Serve the soup with a dollop of cream or creme fraiche.
Chef's Tips
Like your soup thick or thin. Change the amount of water in this recipe to suite your taste.
Green apples work best in this recipe.
Serve it warm or cold.
