- 300g Golden caster sugar
- 250g Butter
- 250g 70% Dark Chocolate
- 4 3 large eggs plus one yolk
- 60g Plain flour
- 60g Finest quality cocoa powder

Put the sugar and butter into a bowl and beat for several minutes until light coloured and fluffy.
Take 200g of the chocolate and break into small pieces - melt in a bain marie.
Beat the eggs. Slowly add the egg to the butter mix beating after every addition.
Once the egg is incorporated stir in the melted chocolate and the remaining 50g of chocolate broken into gravel sized chunks.
Sift together the flour, cocoa and baking powder. Gently fold the flour and cocoa mixture into the rest of the mixture.
Scrape the mixture into a 23cm baking tin that has been lined with baking paper and buttered. Bake at 180ยฐC for 30 minutes.
