- 2 Garlic cloves
- 1 Onion
- 2 Large celery sticks
- 4 Medium Carrots
- 200g Split red lentils
- 1 litre Hot Vegetable stock

Chop the carrot and Celery into small pieces. Finely slice the garlic and onion.
Heat the butter and sweat the garlic and onion for 5 minutes to soften and colour.
Add the celery and carrot to the pan with the lentils and stock.
Cover and simmer for 10 minutes or until the carrots have softened, then blend.
