Description
Quick, easy and cheap to make. Can be served as a starter or for lunch with fresh crusty bread!

1. Roughly chop onion and crush garlic.Separate broccoli into florets.
2. Heat butter in frying pan and fry gently until soft, add garlic and cook for1 minute.
3. Transfer onion and garlic into large saucepan,add broccoli florets,bayleaf and vegatable stock.Bring to boil,then simmer for 15 mins.
4. Remove from heat and crumble in stilton. Discard bayleaf.
5. Whizz in blender until smooth.
6. Transfer back to saucepan,check seasoning, add chilli
flakes if using.
7. Reheat and add cream just before serving.
8. Great as a starter or serve with fresh crusty bread.

Add chilli flakes to your taste if using.
Well I have just made this and I used 370ml of Veg stock with 3 Veg Oxo cubes.
I added 100g Stilton rather than 75g which gave it a much richer taste. I must say it's yummy and even lovelier when the cream went in. Served it with crusty bread. YUM YUM!! Thank you
