Spicy Tomato and Bacon Pasta Bake

Ingredients
- 1tbsp olive oil
- 250g bacon. cut into strips
- 1 large onion diced
- large pinch chili flakes
- 700g mixed mediterranean vegetables chopped; such as courgettes and red peppers
- 400g can chopped tomatoes
- 50g tomato puree
- 2tbsp Dried Mixed Herbs
- 300g good quality rigatoni pasta
- 125g mixed cheeses such as goats cheese and cheddar

Heat oven to gas mark 6 / 200C

Heat oil in a pan, add bacon, onion and chilli flakes. Fry gently for 5 mins, stirring. Add vegetables and cook for 3-4 minutes, until they begin to soften. Add the tomatoes, purée and herbs, simmer for 10 minutes.

Meanwhile cook pasta for 2 minutes less than recommended on the packaging. Drain and mix with sauce. Spoon into an oven proof dish, sprinkle with cheese and bake for 15 mins.
Serve with garlic bread.
