- 400g Sweet Potato peeled and cubed
- 400g can chopped tomatoes
- 850 ml vegetable stock
- 4 tablespoon fromage frais
- 2 tablespoon Chives. chopped

Rry leeks and stir to coat. Season , and add 2 tablespoons water, cover the pan and sweat over a medium heat for 5 minutes until soft.
stir in sweet potaoes, tomatoes and stock, bring to the boil and simmer, covered for 15 mins or until sweet potato soft.
cool then blend till smooth. Add Fromage frais and chives.
