Ingredients
- 4 even sized Pears - peeled. cored and cut in ยฝ or quarter
- 4 oz soft brown sugar
- 9 fl oz Any red wine
- Zest of 2 small Lemons
- 1 stick Cinnamon
- 1 teasp arrowroot/cornflour
- To mix Water (for arrowroot/cornflour) or lemon juice
- 1 star Anise

Place sugar, wine, zest of lemons, cinnamon stick and star anise (if using) into a large saucepan. Bring to the boil, then turn down to simmer.
Prepare and add the pears. Bring up to the boil again for 2 mins and then again turn down to a simmer. Poach the pears for 15 - 20 mins or until the pears are tender. Take out the cinnamon stick and star anise.
Remove the pears from the pan and drain any juices back into the pan. Keep the pears warm - I place in a warmed serving dish. Cook the syrup on a high heat until reduced by half. This may well have happened anyway.
Mix the arrowroot/cornflour with a little water/lemon juice. Draw the pan from the heat and stir in the arrowroot/cornflour. Put back on a turned down heat and cook until the syrup has thickened. Stir like crazy.
Pour over the pears. DO NOT lick the spoon - sugar cooks at a high heat and you will really burn your tongue!
Serve with cream or a good vanilla ice-cream.
Chef's Tips
This is good for using up any leftover wine. It is very good done with Mulled Wine - leave out the cinnamon stick and star anise.
If you have any syrup left over when cool carefully stir in some raspberries. Leave to marinate overnight. In fact will keep for several days in the 'fridge. Then swirl very gently through softened vanilla ice-cream with a skewer or fine knife. Refreeze - Raspberry Ripple Ice-Cream. Good cooks waste absolutely nothing!
