Preheat the oven to 200ยฐC (400ยฐF).

In a small bowl, mix together the breadcrumbs, minced garlic, chopped rosemary, thyme, salt, and pepper.

Season the rack of lamb with salt and pepper, then sear it in a hot skillet with olive oil for 2-3 minutes on each side until browned.

Remove the lamb from the skillet and brush the top with Dijon mustard, then press the herb mixture onto the mustard-coated side.

Place the rack of lamb in a roasting pan and roast in the preheated oven for 20-25 minutes for medium-rare, or until desired doneness.
