Greek Minced Meat and Macaroni Pie (pastitsio)
Ingredients
- 2 tbspn olive oil
- 2 Medium Onion finely chopped
- 2 garlic cloves peeled and crushed
- 500 grms minced lamb or beef
- 1 medium carrot finely chopped
- 400 grms Chopped tinned tomatoes
- 100 mls Dry White Wine
- 4 tbspn Flat Leaf Parsley. chopped
- salt and pepper to taste
- 225 grms short cut macaroni
- 50 grms unsalted butter
- 50 grms grated Kefalotiri or other hard cheese eg Parmesan
- 300 mls Greek Yogurt
- 2 Medium Eggs
- 50 grms grated Kefalotiri cheese

Description
This is a traditional Greek dish, virtually every family has their own variation that they swear is the best.
Method

1. Heat oil in a frying pan over a medium heat,fry onions until transparent. Add garlic and cook for a further 1 minute.
2. Add minced meat and brown evenly, stirring occasionally. Then add carrot, tomatoes, wine and half the parsley.
3. Cook gently for 20 to 30 minutes until most of the liquid is absorbed.
4. Bring a large saucepan of salted water to boil, then add pasta, cook until al dente then drain. Tip into large bowl. Stir in the butter, remaining parsley and grated cheese. Season with salt and pepper.
5. Grease a casserole dish or baking tin, spread half the pasta over the bottom of dish, cover with meat mixture. then cover with rest of the pasta.
6. To make the topping, beat together yogurt and eggs, season.
7. Pour over topping and sprinkle with grated cheese.
8. Bake in over at 190 degress C for 25-30 minutes until golden brown. Serve hot or cold.
